Valentine’s Day Quarantine Style

Ahhh Valentine’s Day, love it or hate it the holiday has become hard to ignore, even when living on the islands. Though the holiday may not be as big or as commercial in the Caribbean, it is still very much celebrated by those in love and those who love…well love. Though going into 2021 we’re still facing a worldwide pandemic, how we make this Valentine’s Day special. As most things will look a little different it can still be a fun and romantic holiday that is celebrated safely.


Planning a relaxing breakfast in bed for your special someone. Making charcuterie boards to snack on throughout the day while lounging around. Purchasing some fresh flowers, balloons, lighting candles, or other fun decorations to brighten up your home could help set a romantic and festive mood. Or maybe a friendly game of Monopoly or your other favorite board games. It can also be fun to include the little ones in for a fun Valentine’s Day family activity. Setting up a movie night in, with popcorn and other snacks can also make for a fun date night just check your favorite streaming service like Netflix or Hulu and see what looks good!


If you’re celebrating solo this year it can still be fun to get dressed up, maybe have a zoom date with a few girlfriends and have a virtual happy hour. It’s always a good idea to celebrate love whether romantic, familial or friendship.

Below we’ve included Haitian Chef Melissa François’, who is a friend of CE, recipes for a romantic three course dinner for two, you can either make together with your special love or surprise her or him with your wicked cooking skills instead!


Happy Valentine’s Day


These dishes unite every element that could make this Valentine’s Day a most memorable one. The night will heat up as every element was selected to not just awaken your taste buds.


First Course:

Watermelon Carpaccio Passion Fruit Vinaigrette with Herbs and Fresh Cheese Crumbles


5 oz. Watermelon (thinly sliced)


Passion Fruit Vinaigrette

2 oz. Passion fruit pulp

1 oz. Vegetable oil

1 oz. Lemon juice

Salt

Sugar

Mix everything together.


Basil Fresh Cheese

2 T Vinegar

Vegetable oil

1 bunch of basil

1 cup milk

Warm milk. Add vinegar and stir. The whey should separate the cream. Strain and gather the curd. In a blender mix basil with oil. Mix about 2 tablespoons of the mixture with the curd. And you get basil fresh cheese.


Lay the thinly sliced watermelon on a plate drizzle the passion fruit vinaigrette and add the cheese crumble.


Main Course:



Seared New York Strip over Sweet Potato Porto Réduction Monte Au Chocolat


16 oz. New York strip steak

3 tablespoons chef spice

Dash of paprika and cayenne pepper

3 oz. Porto

1 oz. dark chocolate

3 tablespoons of cream

1 teaspoon of mustard


Mix chef spice with paprika and cayenne pepper. Season steak. In a hot pan with oil sear the beef for 3 minutes each side. Deglaze the pan with the Porto and let it reduce. Add the cream and mustard. Melt the chocolate.


Mashed Sweet Potato

½ lb. sweet potato

2 oz. butter

3 oz. cream

Salt

White pepper


Peel sweet potato. Put in pot with water. Bring water to a boil. Let the potato cook until soft. Mashed with cream and butter and seasoning.


Red Wine Rose Water Red Poached Turmeric Whipped Cream

1peeled pear

1 bottle Red wine

2 tablespoon rose water

¼ cup white sugar


Whipped cream

3 oz. whipped cream

1 teaspoon turmeric

1 dash of cayenne pepper

2 teaspoon sugar


In a saucepan poach pear in red wine add the rose water. Let it cook for 30 minutes.


Now you’re ready to serve and get your evening started!
